Waffle recipes



                                                          some unusual waffle recipes


   Cashew waffles


(makes 6 large Belgian waffles, will make more in a smaller iron)
3 eggs
1 cup raw cashews
1/3 cup almond milk (or any non-dairy milk)
3 tablespoons honey or maple syrup/xylitol/stevia
3 tablespoons coconut oil, melted
¼ teaspoon salt
¾ teaspoons baking soda
3 tablespoons coconut flour
  1. Preheat your waffle iron.
  2. Combine the eggs, cashews, milk, honey, and melted coconut oil in a blender. A high-speed blender isn’t necessary (I use a simple Waring blender), although it will make the process easier. Blend until very smooth and creamy. You may need to stop the blender and push the mixture down the sides a few times to get it all to blend really well.
  3. Add the salt, baking soda, and coconut flour, then blend again for about a minute until the dry ingredients are incorporated into the wet.
  4. If you’re iron requires oil, spread a little coconut oil on both sides. Pour the batter into the waffle iron so it just covers the bottom portion of the iron, being careful not to overfill it as these do rise quite a bit and will spill over.
  5. Cook the waffles for about a minute, more or less depending on the heat of your waffle iron. If they release easily with a fork when you open the lid, they are probably done.
  6. Repeat until the batter has been used up.
Eat these immediately for the best flavor and texture, but they will also reheat well in a toaster.

limes x 3 ( zest and juice)
 natural sweetener

Brown Butter Strawberry Cake (makes 1- 8inch round cake) Note* the cake above is 4-8inch cakes layered on top of each other
  • 1 3/4 cup almond flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 2 TBS honey/nat sweetener
  • 3 eggs
  • 1/2 TBS pure vanilla extract
  • 4 TBS butter
  • 1/2 cup quartered strawberries (about 8-10)
Preheat oven to 350F.
Grease an 8inch round cake pan. Trace the bottom of the pan on parchment paper, cut out circle and place on bottom of pan.
Melt butter in a small pan over medium/low heat until browned and fragrant. Set aside.
In a blender pulse almond flour, salt and baking soda until combined. Add honey, eggs, vanilla, and brown butter. Blend until smooth.
Pour mixture into a bowl and fold in quartered strawberries. Pour batter into prepared cake pan. Bake for 25-30 minutes.
Swiss Meringue (Makes about two cups)
Note: this is a take on swiss meringue buttercream which traditionally made by heating the egg whites with sugar and beating with a lot of butter. There are several recipes online for this if you want a more creamy "icing" on your cake. My version is very light, similar to marshmallow fluff and it needs to be eaten right away so if you plan on having a lot of left overs I would advice using another icing recipe such as the buttercream mentioned above or perhaps a cashew cream or coconut cream icing.
  • 2 room temperature egg whites
  • 1/4 tsp lemon juice
  • 1/2 cup light colored honey
Bring the honey to boil.
Meanwhile beat, using a hand-held mixer or standing mixer on medium to high speed, the egg whites and lemon juice until stiff peaks. This can take about 10 minutes or more.
With the mixer still on slowly (and carefully!!) pour the hot honey into the egg whites and beat a minute more.
Using a spatula or icing tool spread the meringue on top of the cake and serve immediately.

Golabki


  pork mince-2 kg
onions- 2-3
peppers 2-3
courgettes 2-3
leeks x 1
garlic -1-2 cloves
2-3 cabbages
tomatoes x 5-7 ( or tomato sauce)
 eggs x 3
coconut flour x 1 tbsp
psyllium husks x 1 tsp

salt, pepper
optional ( carrots, calendula petals etc)
 
 meat or veg stock


Set the oven to 160C
In a large pot, boil water.
blanch cabbage leaves in hot water  until soft and flexible ( if needed, remove the top of main leaf vain)
Leave to cool.
 Place pork mince in large bowl
 add grated veg ( onions, peppers, courgettes, leeks, carrots), seasoning, eggs, crushed garlic, coconut flour, psyllium husk, calendula 
 Mix well together until well combined

Stuff each leaf with the mixture and place in a large, oven proof  dish greased with olive oil
( I use my cast iron pot)
Top up with the stock, place some tomato wedges over the top, cover with a lid and place in the oven.
 Bake for approx 1,5-2h until well done






preserving peppers

 one HUGE box of organic green peppers ( approx 300 :->) generously given to us by a friend
 We managed to used some  but after a few days of very hot weather, I decided, it`s time to preserve the rest.... somehow.. :)
  Washed and sliced, we dehydrated a large part and  froze all the rest -stir fried  with olive oil and garlic

Eggplant on the wafflebaker!

  

Aubergine and parmesan  cheese `waffles`

Alternative use of your waffle maker :)




 slice raw eggplant about 1/3 inch thick.
 Dip each slice in whisked egg, then dip it  in finely grated parmesan to cover them.
(Add fresh herbs to the cheese (optional) )
 Place the slices in waffle iron brushed with olive oil.

1/2 kg meat mince ( pork, beef etc)

4 cloves of garlic
7-10 tomatoes
olive oil
fresh basil
herbs de Provence

2 łyżki przecieru pomidorowego
