Brownies again

from Reeses brownies recipe


we had some guests over the week-end so  brownies again  :)










pizza base

   I slightly modified this recipe for sub sandwich 

1 1/4 cup blanched almond flour (or 1/2 cup coconut flour)
5 TBS psyllium husk powder (no substitutes) 
1 tsp baking powder /soda
1 tsp Celtic sea salt
2 eggs  ( 4 id coconut flour used)
 2-3 TBSP grated parmesan
1 cup BOILING water (or MARINARA - for more Tomato Basil Bread!)
optional:  ad some dried onion chips or onion powder)


Preheat the oven to 220C.  I used preheated  terraccota pizza circle   ( placed it in the oven at this point)
 In a medium sized bowl, combine the flour, psyllium powder (no substitutes: flaxseed meal won't work), baking powder/soda and salt. Mix until dry ingredients are well combined.  Add in the eggs and mix until a thick dough. Add boiling water or marinara into the bowl. Mix until well combined and dough firms up.
 Add parmesan and mix some more

Form a ball and  flatten it to approx 0.5 cm thick circle  Bake for   10-15 min until golden brown
Remove from the oven and  sprinkle with some more grated parmesan 
Return to the oven and bake for additional 5 min to for a `crust`
 Remove from the oven and add the topping of your choice ( marinara sauce, cheeses, parma ham etc)
Bake until all the cheese melted and ready.




 the base is suitable for freezing

 5 lyzki babki plesznik ( lusek)- zaden inny substytut nie wchodzi w rachube

1 lyzeczka sody
1 tsp soli ( dobrej, o wysokiej zaw mineralow)
2 jajka ( lub 4 jesli uzywamy maki kokosowej)
 2-3 lyzki drobno startego parmezanu
1 miarka goracej wody


piekarnik ustawic na 220C.
 Ja uzylam ceramicznej plyty do pieczenia pizzy wiec wstawilam ja wczesniej do nagrzania
W sredniej wielkosci misce wymieszac make, babke plesznik, sode, sol.
 Dodac jajka u wymieszac na gesta mase
Dolewac stopniowo wrzatek i mieszac do polaczenia. Na koniec dodac parmezan
 Mozna tez dodac ok lyzki proszku cebulowego ( suszonej cebuli)

Utworzyc kule i rozgniesc ja dobrze na plycie do pizzy do grubosci ok 0.5 cm.
 Wstawic do piekarnika i podpiec przez ok 10-15 min ( do zrumienienia)
Posypac parmezanem, posmarowac sosem pomidorowym  wlasnej kompozycji i dac na gore ulubione dodatki ( starty ser, szynke, szpinak, cebule, oliwki itp)
 Wstawic do piekarnika i piec do momentu stopienia sera i podpieczenia wszystkich skladnikow


Scanning old negatives



 finally, I managed to organize  some old memories ( hundreds and hundreds of  our family and `single` photos) and came across some old negatives, many containing photos which we gave away ( early children`s pics, our wedding and trips photos)
I decided, it will be probably best to digitilise  it all ( for easy viewing, storage and sharing with friends)
 I did some research and gathered, it would be best to purchase a negative scanner and do the job myself.
 This one sounded  good enough  so I ordered it via amazon and it arrived a few days later.
It does good job, indeed.
 So here I am with over 5000 images, some long forgotten as we seemed to be giving away all the best shots .. editing one by one in lightroom ( removing dust, stains and scratches as many were rather old or not stored very carefully)
 Lots of hard work, many hours of patience but also plenty of fun and so MANY good good memories.
  A real time capsule.
