St. Valentine`s treat- raw chocolates
chocolate liquor, coconut oil, algarroba ( for sweetness), passion fruit extract, cranberries ( dried, unsweetened)

`sponge` almond flour +eggs+vanilla extract+natural sweetener

Maria`s sub sandwich and panini

HEALTHIFIED" SUBNote: I added less soda so it didn`t rise that much but it it came our very nice, all the same.
1 1/4 cup blanched almond flour (or 1/2 cup coconut flour)
5 TBS psyllium husk powder (no substitutes)
2 tsp baking powder
1 tsp Celtic sea salt
3 egg whites (8 egg whites if using coconut flour) (My eggs are large sized on average)
1 cup BOILING water (or MARINARA - for more Tomato Basil Bread!)
OPTION: Use 2 whole eggs (Almond flour version) or 4 whole eggs (coconut flour version). If you are having trouble with it rising using whole eggs you can try egg whites.
Preheat the oven to 350 degrees F. In a medium sized bowl, combine the flour, psyllium powder (no substitutes: flaxseed meal won't work), baking powder and salt. Mix until dry ingredients are well combined. Add in the eggs and mix until a thick dough. Add boiling water or marinara into the bowl. Mix until well combined and dough firms up.
Form into 4 to 5 mini subs (the dough will rise about 2 to 3 times so I start mine as a 1 inch disk, see picture below) or one large sub/loaf and place onto a greased baking sheet. Bake for 65 minutes (50 minutes for smaller shapes like buns). Remove from the oven and allow the bread cool completely. Cut open with a serrated knife. Fill with desired fillings. Makes 5 servings.
NOTE! If you get a hollow bread, try lowering the oven temperature to 300 degrees F. It will rise less (maybe 2X instead of 3X at 350) but it will be less likely to get an air bubble. :)

Yield: 6 servingsA creamy roasted garlic soup recipe with hearty chunks of chicken. The perfect winter warm up meal!Ingredients
- 20 cloves garlic, unpeeled
- 2 tbsp olive oil
- salt and pepper to taste
- 2 tbsp butter
- 1 medium onion, thinly sliced ( I also roasted onions- unpeeled)
- 12 cloves garlic, peeled
- 1/2 tsp dried thyme
- 4 cups chicken stock
- 1/2 cup whipping cream
- 1 ½ lbs cooked chicken thighs or breasts, cubed
- salt and pepper to taste
Instructions
- Preheat oven to 350F and place unpeeled garlic cloves in a shallow baking dish. Add olive oil, salt and pepper and toss to coat.
- Roast until garlic is golden brown, about 35 minutes.
- Cool and squeeze out garlic with fingers into a small bowl.
- In a large saucepan over medium heat, melt butter. Add onions and cook until translucent, about 6 minutes.
- Add roasted garlic, additional garlic cloves, and thyme and cook 2 to 3 minutes, until fragrant.
- Add chicken stock and bring to a simmer. Cook 20 minutes.
- Puree using a blender or immersion blender. Stir in whipping cream and cooked chicken and season with salt and pepper.
- Warm through and serve.
NotesServes 6. Each serving has 7 g of carbs.

- 20 zabkow czosnku ( nieonbranych)
- 2 lyzki oliwy z oliwek
- sol i pieprz do smaku
- 2 lyzki masla
- 1 srednia cebula, pokrojona drobno
- 12 zabkow czosnku ( obranych)
- 1/2 lyzeczka suszonego tymianku
- 1 litr wywaru/rosolu z kurczaka
- ok 100 ml gestej smietany
- 2-3 piersi z kurczaka - ugotowane i pokrojone w kostke
- do piekarnika ustawionego na 180 st wstawic nieobrany czosnek ( w plaskim naczyniu, najlepiej ceramicznym) zalany oliwa , doprawiony sola, pieprzem - dobrze wymieszac.
Piec do miekkosci i az czosnek nabieze zloto-brazowego koloru- ok 35 min- odstawic do ostygniecia i obrac
- zeszklic cebule na masle- ok 6 min
- dodac pieczony czosnek, pokrojony w plasterki swiezy czosnek, tymianek- podsmazyc przez ok 2-3 min na wolnym ogniu
