Coconut, Strawberry cheesecake

1 kg cheese ( quark, polish twarogowy etc)
3 tbsp natural sweetener ( I use raw honey )
small amount of hot water
7 tbsp gelatine
2 cans of coconut milk -220ml each
approx 20-30 large strawberries- washed, drained and halved

prepare a large, rectangular baking dish lining it with grease proof paper
place all the cheese in large bowl and mix well until smooth adding fruit sugar gradually



 prepare gelatine according to instruction on the package and  while still hot, add to the coconut milk mixing well to combine it. Gradually add coconut and gelatine to the cheese mixture, again, mixing well while adding and making sure it`s well combined

 Pour the content to the dish and gently press strawberry halves. Place in the fridge. It`s setting very fast and it should be ready within 1-2h
