Alternative use of your waffle maker :)




 slice raw eggplant about 1/3 inch thick.
 Dip each slice in whisked egg, then dip it  in finely grated parmesan to cover them.
(Add fresh herbs to the cheese (optional) )
 Place the slices in waffle iron brushed with olive oil.
