Easy ice cream base

 Egg yolks -approx 1 p/person
 natural sweetener approx 1 tsp p/egg yolk
pinch of Himalayan salt

 coconut milk/double cream/natural yogurt ( approx 100ml/3 egg yolks )
vanilla, maple syrup extract, cacao powder, coffee extract, orange essential oil/ rind/ nuts/fruit puree etc

 zoltka- ok 1 na osobe
naturalny slodzik -ok 1 lyzeczki na zoltko
szczypta soli himalajskiej

mleko kokosowe/tlusta smietana/jogurt naturalny pelnotlustyok 100ml/3 zoltka)
ekstrakt waniliowy, klonowy, czekoladowy, kawowy lub inny wybrany, naturalne olejki( np pomaranczowy, cytrynowy ), przyprawy korzenne, pure owocowe, kakao

Pumpkin ginger and cardamon ice cream




10 egg yolks sweetened with a little coconut blossom sugar and a pinch of  Himalayan salt
 whisked until fluffy
 1 can coconut milk - 400 ml or double cream
 1 cup (250 ml) roasted pumpkin puree
1 tsp orange rind or 10 drops food grade organic orange oil
1 tsp ginger
1 tsp cardamon
1 tsp Ceylon cinnamon
1 tbsp orange/lemon juice or 1 tsp apple cider raw vinegar

10 srednich zoltek utartych z 1/2 lyzeczki drobnej soli himalajskiej i moze 2ma lyzkami cukru kokosowego ( ciemny, nierafinowany - inny slodzacy oczywiscie tez wchodzi w rachube)
1 puszka mleka kokosowego ( najlepiej bez dodatkow )- puszka =400g
1 szklanka pure z pieczonej dyni
lyzeczka zmielonego kardamonu
lyzeczka imbiru ( fajny jest swiezy jesli drobno starty)
lyzeczka cynamonu cejlonskiego
1 lyzka soku z cytryny lub pomaranczy lub surowy ocet cydrowy tez dobry- do zakwaszenia odrobine by nie byly za mdle ale mozna oczywiscie pominac zaleznie od upodoban
1 lyzka startej skorki pomaranczowej ( albo dobrej jakosci olejek pomaranczowy do celow kulinarnych- wtedy pare kropel jesli czysty )
1 lyzka miodu niepasteryzowanego ( mozna pominac albo dac wiecej,z aleznie od upodoban znowu )
Jaja utarte z cukrem kokosowym na puszysta mase . Pod koniec sok z cytryny. Mozna oczywiscie podgrzac na parze wg uznania. My na surowo, jaja ze sprawdzonego zrodla wiec nie mam z tym problemu. Jesli na parze to z odrobina mleka/smietany lub na tym mleku kokosowym juz mieszajac razem.

Jesli surowe, ubite mieszam z mlekiem kokosowym, reszta skladnikow do calkowitego polaczenia.
Wstawiam na troche do lodowki zeby schodzic- tak ok. godziny ( albo na 15 min do zamrazarki ) Pozniej do maszyny. Ok pol godziny, w zaleznosci od lodziarki i gotowe
Mozna tez pewnie zamrozic w pojemniku i na styl wloski beda.

Cashew , coconut and cardamon ice cream




8 yolks
natural sweetener ( or raw honey)- to your taste
coconut milk x 2 tins
cashew butter ( no additives)- 1 cup
cardamon pods

 whisk yolks with  even small amount of natural sweetener ( in ex. xylitol ) until white and triple the volume
either use raw or make creme anglaise based on 1 cup coconut milk ( or regular milk) seasoned with cardamon pods
 add slowly to softened cashew butter and whisk in
Add second tin of coconut milk ( or cream)
cool down 
Switch on ice cream maker and add the mixture
 When ready, decorate with coconut chips, crashed nuts, etc

Apple Pie Ice Cream





 


Ingredients
1 cup raw milk--
(( for milk allergies you can use coconut milk but it DOES change the flavor!))
1/2 cup honey 
2 cups heavy cream
(( for milk allergies you can use coconut cream but it DOES change the flavor!))
Pinch of unrefined sea salt
6 egg yolks
2 tsp ground cinnamon
1 Tbsp vanilla

For the apples:
1½ Tbsp butter
3 large apples, peeled and diced into small pieces
½ tsp ground cinnamon


1. In a medium sauce pan over medium-low heat, whisk together the milk, honey, 1 cup of cream, and sea salt. When the mixture begins to simmer, remove the sauce pan from heat.
2. In a separate bowl, whisk together the egg yolks. Pour a ladle-full of the heated liquid from the sauce pan into the bowl of egg yolks. Whisk quickly and add a few more ladle fulls of the liquid to the eggs. Whisk continuously so that the egg yolks do not scramble.
3. Pour the tempered egg mixture back into the saucepan and heat the sauce pan on medium-low heat for about 5 minutes. When the sauce thickens, remove from heat. Add cinnamon and vanilla.
4. Pour the milk mixture into the remaining 1 cup of cream. Let the mixture cool, then refrigerate this mixture until well chilled.
5. Once chilled, prepare the apples before you add the milk mixture to your ice cream machine. To prepare the apples, melt butter in a skillet over medium heat. Add apples and cinnamon and stir. Saute the apples until golden and soft (about 10-15 minutes). Let the apples cool.
6. Now, add the  apples to half of the milk mixture. 
7. Pour the pureed mixture and the remaining milk mixture into your icecream maker. Freeze it 
After scooping out  top with a little nutmeg :) APPLE PIE ALL OVER AGAIN!
The cinnamon does has a SMALL slight griddy taste, but the icecream is very creamy and very tasty! :)

 easiest ever

 semi-frozen peeled bananas
 chilled natural yogurt( optional)
food processor
 place bananas( and some yogurt if used) in powerful blender/food processor with blade
 Blend until smooth
 Serve & Enjoy!

2 ripe bananas
2 cups of coconut milk
3/4 cup raw honey
1 teaspoon rose-water* (optional)
4 tablespoons cocoa powder  (optional)
