Frozen / dried chocolate treats







Ingredients

 frozen or dried fruit (I used frozen, organic raspberries and prunes ( sulphur free, unsweetened)
 raw, organic cacao mass/liquor
 raw honey ( enough to sweeten to taste)
 pinch of salt
optional: natural extract/vanilla,raspberry/raw honey to taste, salt, extract

Directions 

 Melt cacao liquor over hot water ( bain-marie)
 when cool, add
 Deep frozen fruit/dried fruit, pieces of banana etc in liquid chocolate
 place on a tray
 Transfer to freezer for approx 20 min








Apple Pie Ice Cream





 


Ingredients
1 cup raw milk--
(( for milk allergies you can use coconut milk but it DOES change the flavor!))
1/2 cup honey 
2 cups heavy cream
(( for milk allergies you can use coconut cream but it DOES change the flavor!))
Pinch of unrefined sea salt
6 egg yolks
2 tsp ground cinnamon
1 Tbsp vanilla

For the apples:
1½ Tbsp butter
3 large apples, peeled and diced into small pieces
½ tsp ground cinnamon


1. In a medium sauce pan over medium-low heat, whisk together the milk, honey, 1 cup of cream, and sea salt. When the mixture begins to simmer, remove the sauce pan from heat.
2. In a separate bowl, whisk together the egg yolks. Pour a ladle-full of the heated liquid from the sauce pan into the bowl of egg yolks. Whisk quickly and add a few more ladle fulls of the liquid to the eggs. Whisk continuously so that the egg yolks do not scramble.
3. Pour the tempered egg mixture back into the saucepan and heat the sauce pan on medium-low heat for about 5 minutes. When the sauce thickens, remove from heat. Add cinnamon and vanilla.
4. Pour the milk mixture into the remaining 1 cup of cream. Let the mixture cool, then refrigerate this mixture until well chilled.
5. Once chilled, prepare the apples before you add the milk mixture to your ice cream machine. To prepare the apples, melt butter in a skillet over medium heat. Add apples and cinnamon and stir. Saute the apples until golden and soft (about 10-15 minutes). Let the apples cool.
6. Now, add the  apples to half of the milk mixture. 
7. Pour the pureed mixture and the remaining milk mixture into your icecream maker. Freeze it 
After scooping out  top with a little nutmeg :) APPLE PIE ALL OVER AGAIN!
The cinnamon does has a SMALL slight griddy taste, but the icecream is very creamy and very tasty! :)

Banana Icecream

 easiest ever

 semi-frozen peeled bananas
 chilled natural yogurt( optional)
food processor
 place bananas( and some yogurt if used) in powerful blender/food processor with blade
 Blend until smooth
 Serve & Enjoy!
