Cloud bread
- 3 eggs, separated
- 3 Tablespoons cream cheese
- ¼ teaspoon baking powder (or cream of tartar)
- Optional ingredients: 1 TBS Honey or your favorite natural sweetener, salt, garlic powder, rosemary and other fav spices/herbs
Directions
- Preheat oven to 300 degrees Fahrenheit (150 degrees Celsius)
- Separate the eggs, there must be no yolk in the white.
- In one bowl, mix together the egg yolks, cream cheese and honey until smooth.
- In the second bowl add 1/4 teaspoon of baking powder (or cream of tartar if you prefer, I just didn’t like the taste of cream of tartar) to the whites and beat the whites on high speed until they are fluffy, form a nice peaks and hold their peaks. It should look something like this:

Raw chocolate fudge
there is no particular recipe for this one
we simply melt some raw cacao paste over hot water pan, add a little coconut oil, a nut paste, plenty of nuts and dried fruit + some seeds. If enough fruit, there is no need to sweeten it , otherwise a spoonful of raw honey added to cooled mixture should do the job ( especially if you not heavy sugar user and would prefer this to be more on the paleo side.
Refridgerate

Egg for breakfast

Halva aka thaini fudge
1 jar thaini ( 250g )
a few chunks raw cacao butter
1 tbsp raw honey
1 cup mixed dried berries ( raisins, mulberries, chopped dates, goji, Inca, raspberries etc )
1 cup nuts/seeds/coconut chips
prepare 20x20 cm square silicon form or 2x loaf pans ( if not silicon, it would be good to layer them with baking paper )
Melt cacao butter combining well with thaini.
Remove from heat and when cooled, sweeten with honey, fold in berries, nuts etc.
Distribute evenly in prepared pan/s
Refrigerate or freeze until solid.
Cut into squares, enjoy while still cold.

Chocolate chip and macadamia cookies
Ingredients
- 2 1/2 cups almond flour
- 1/2 cup almond butter
- 1/2 cup unsweetened shredded coconut
- 1/2 cup honey (molasses or maple syrup )
- 1/4 cup coconut oil, melted
- 1 egg
- 1/2 macadamia pieces
- 1/2 cup unsweetened raw chocolate chips
- vanilla extract
- 1/2 tsp sea salt
- 1/2 tsp baking soda
Instructions
- Preheat oven to 180 C
- Combine all the ingredients above except for chocolate chips s in a mixing bowl and mix well with your hand mixer
- Fold in your choco chips +nut sand ensure an even distribution by hand
- Using your cookie scoop, place scoops of cookies on a parchment lined baking sheet leaving room between the cookies because they will slightly expand
- Using the back of a spoon or your hand, slightly flatten the cookies
- Bake in the oven for 10-15 minutes or until done but ensure you continually check it so you don't burn them, some peoples ovens will be hotter than others
- Remove from the oven, place on a cooling rack or plate
- Enjoy

Easter Breakfast
Children were singing in the choir during Easter morning service so our special breakfast was a little later belated, more like Brunch but we were lucky to catch a few rays of sun on this windy Easter Sunday
