Carolyn Ketchum’s Raspberry Coconut Scones | Coconut Oil Cooking
Raspberry Coconut Scones
2 ½ cups almond flour
½ cup golden flax seed meal
½ cup unsweetened, shredded coconut
½ cup granulated erythritol or sweetener of choice
1 tbsp baking powder ( or soda)
¼ tsp salt
2 large eggs, lightly beaten
1/3 cup coconut oil, melted
¼ cup almond milk ( I used cow`s milk)
½ tsp coconut or vanilla extract
1 cup frozen raspberries ( we added dried cranberries)
Preheat oven to 325F.
In a large bowl, whisk together almond flour, flax seed meal, shredded coconut, erythritol, baking powder and salt.
Stir in eggs, coconut oil, almond milk and coconut or vanilla extract until dough comes together. It will be quite sticky.
Stir in raspberries until well distributed.
Turn out dough onto a cookie sheet lined with parchment paper and pat into a rough rectangle, 6 by 8 inches. Cut into 6 even portions, and then cut each portion in half diagonally to make 12 triangular scones.
Gently separate scones and place around cookie sheet, leaving at least 1 inch between them. Bake 28 to 30 minutes, or until golden brown and firm to the touch.
Remove and let cool on pan.

Blok czekoladowy/ chocolate loaf
przepis zmodyfikowany/ w oryginale Blok Jaco
1 paczka zwykłego mleka w proszku (nie może być granulowane!)
2 szklanki orzechow, bakalii ( orzechy rozne, platki kokosowe, suszone owoce)
1 masło 250g
5 lyzek kakao
1/2 szkl cukru kokosowego
3/4 szklanki wody

"Szykujemy dwa garnki (jeden duży a drugi średni) i blachę. Blachę wykładamy folią spożywczą. Powinna być wytrzymała. Ja czasem z braku laku używam czystej reklamówki. Folia powinna sporo wystawać poza blachę. Znaczy się zwisać.
I do dzieła:
Do dużego gara wsypać mleko w proszku, pokruszone herbatniki (ja jeden herbatnik łamię tak na 8 części) i pokruszone orzechy. Wymieszać.
Do drugiego garnuszka wrzucić resztę składników. Czyli masło, cukier, kakao i wodę. Rozpuścić, zagotować momencik.
Wlewać po trochu uzyskanego płynu do garnka z mlekiem i herbatnikami i szybko mieszać. Ja to robię systemem pół na pół. Czyli płynu zawsze wlewam pół tego co mam w garnku, mieszam, i znowu pół i znowu.
Uprzedzam, że masa szybko gęstnieje i wymieszanie tego tak, żeby wszystko było w kakaowym kolorze a nie białym od mleka jest wcale nie łatwe. Trzeba to robić szybko i sprawnie.
Wymieszaną masę wpakować do blachy, przykryć resztką zwisającej folii i mocno dociskać, tak, żeby uformować odpowiedni kształt, coby w środku powietrza nie było.
Wstawić do lodówki. Powinno odstać kilka godzin, żeby stwardniało. Najlepiej jeść następnego dni. O i najlepiej zrobić od razu dwie porcje "

BBC - Food - Recipes : Coronation chicken
BBC - Food - Recipes : Coronation chicken
Ingredients
- 2 free range chicken breasts, skin removed
- 1 tbsp olive oil
- 1 lemon, juice and zest
- sea salt and freshly ground black pepper
- knob of butter
- 1 shallot, finely chopped
- 1 red chilli, deseeded and finely chopped
- 2 teaspoons madras curry powder
- 2 tbsp tomato purée
- 100ml/3½fl oz dry white wine
- 100ml/3½fl oz chicken stock
- 1 tbsp apricot jam
- 150ml/5fl oz mayonnaise
- 75ml/3fl oz crème fraîche
- 1 large mango, peeled, stone removed, flesh diced
- 4 spring onions, finely chopped
- 2 tbsp chopped fresh coriander
- dash Tabasco sauce
- 50g/2oz flaked almonds (toasted lightly dry frying pan)
- green salad leaves, to serve
Preparation method

Rub the olive oil all over the chicken. Scatter over the lemon zest and season with the salt and black pepper.

Steam the chicken for 20-25 minutes, or until cooked through, then set aside to cool.

Melt the butter in a frying pan, add the shallot
and chilli and fry for five minutes. Stir in the curry powder and cook
for 2-3 minutes. Stir in the tomato purée and cook for a further minute.
Add the wine and continue to cook until the volume of the liquid has
reduced by half.

Stir in the jam and stock, continue to simmer until the volume of the liquid has reduced by half. Set aside to cool.

Mix the mayonnaise and the crème fraiche in a bowl
until well combined, then stir in the curry dressing. Fold in the mango,
spring onions, lemon juice and coriander.

Cut the chicken into bite-sized pieces. Fold this
into the mayonnaise mixture. Season with salt, freshly ground black
pepper and Tabasco to taste. Serve with a green salad, and dress with
the toasted almond flakes.

Italian Pillow Cookies
Just made those tonight. Very yummy!!
Even without icing. And the filling is perfect
"HEALTHIFIED" ITALIAN PILLOW COOKIES
1/2 cup butter
1/2 cup cream cheese
3/4 cup confectioners Swerve (or powdered erythritol and 1 tsp stevia glycerite)
1/4 tsp baking powder
1 egg
1/2 tsp Celtic sea salt
2 cups blanched almond flour
1/4 cup coconut flour
FILLING
1/2 lb walnuts (or pecans/macadamia nuts/almonds)
2 TBS butter or coconut oil
1/2 cup Swerve (or erythritol and 1/2 tsp stevia glycerite)
1 tsp cinnamon
2 egg whites
ICING
1 cup confectioners' Swerve (or powdered erythritol and 1 tsp stevia glycerite)
1 tsp almond extract (or other extract... orange maybe!)
2 TBS unsweetened almond milk
Preheat oven to 300 degrees F. In a large bowl, cream the butter and the cream cheese for 1 minute. Add the natural sweetener and continue mixing until creamy. Add the egg, extract and salt and mix again. Stir in the flours, baking powder and salt. Combine until smooth. Refrigerate until ready to use.
To make the filling, either process the nuts through a food processor until finely chopped (just a little larger than all-out ground), or chop by hand. Combine the chopped nuts with the natural sweetener and cinnamon and then add in the melted butter or coconut oil. Mix well, making sure there are no large clumps. Add the egg whites and again, mix well.
Roll out a piece of dough into a rectangle on a greased piece of parchment paper, measuring about 6 inches by 18 inches. Spread ¼ of the nut filling onto the dough, leaving a small border around the perimeter of the dough. Roll up as you would a jelly roll, with the short ends to the left and right of you, and seal the ends. Cut the roll into 1-inch pieces and place on the cookie sheet. Bake for 15-20 minutes or until the tops are just slightly starting to turn brown. Cool completely. Repeat with the remaining pieces of dough and remaining filling. Once the cookies are cooled, prepare the icing by mixing together the confectioners' Swerve, extract, and enough milk to achieve the desired consistency. You'll want the icing to be thick enough to not be runny, but still easily spreadable. Ice the tops of the cookies and let set completely before storing in an airtight container. Makes 32 servings.

3 -4 tablespoons white vinegar ( or apple cider vinegar) ( skip the vinegar if preparing dry curry mix to be used instantly)
Directions:
Put all ingredients except vinegar into small bowl and mix together well.
Add the vinegar and mix to a smooth paste.
Keep for up to one month in an airtight container in fridge.

Ingredients
- 2 onions , quartered
- 4 tbsp sunflower oil ( olive oil)
- 4 garlic cloves , finely crushed
- thumb-size piece fresh root ginger , peeled and very finely grated
- 2 tbsp Madras curry paste( sugar, wheat, corn free or make your own if healthy option not available)
- 2 tsp paprika
- 1 cinnamon stick
- 6 green cardamom , bashed to break the shells
- 4 cloves
- 2 bay leaves
- 1 tbsp tomato purée
- 1kg lean leg of lamb , cut into generous cubes
- 150ml Greek yogurt
- chopped coriander , to garnish
- Put the onions in a food processor and whizz until very finely chopped. Heat the oil in a large heavy-based pan, then fry the onion with the lid on, stirring every now and then, until it is really golden and soft. Add the garlic and ginger, then fry for 5 mins more.
- Tip the curry paste, all the spices and the bay leaves into the pan, with the tomato purée. Stir well over the heat for about 30 secs, then add the meat and 300ml water. Stir to mix, turn down the heat, then add the yogurt.
- Cover the pan, then gently simmer for 40-60 mins until the meat is tender and the sauce nice and thick. Serve scattered with coriander.

Chocolate Raspberry French Macaroons
Chocolate Raspberry French Macaroons | Maria's Nutritious and Delicious Journal
MACAROONS:
2 cups blanched almonds ( or ready almond meal)
3 large egg whites
3/4 tsp Celtic sea salt
3 TBS Swerve (or Erythritol) ( I used xylitol)
GANACHE:
3 oz unsweetened chocolate, finely chopped
1/3 cup vanilla almond milk (or heavy cream)
Swerve or stevia glycerite (to taste)
1 TBS coconut oil or butter, softened
1/16 tsp raspberry extract
Place 1/2 cup Swerve or erythritol in a coffee grinder/food processor and blend until a fine powder.
Macaroons: Line 2 baking sheets with parchment paper. Pulse almonds with 1/2 cup Swerve in a food processor until very finely ground, 2 to 3 minutes, then transfer to a bowl (or use blanched almond flour).
In another bowl, beat egg whites with an electric mixer at medium speed until they just hold soft peaks. Add Swerve and salt, a little at a time, beating, then increase speed to high and continue to beat until whites just hold stiff, glossy peaks. Stir almond mixture into meringue with a rubber spatula until completely incorporated. (Meringue will deflate.) Spoon batter into bag, pressing out excess air, and snip off 1 corner of plastic bag to create a 1/4-inch opening. Twist bag firmly just above batter, then pipe peaked mounds of batter (the size of a chocolate kiss) onto lined sheets about 1 1/2 inches apart. Let cookies stand, uncovered, at room temperature until tops are no longer sticky and a light crust forms, 20 to 30 minutes. Preheat oven to 300°F. Bake cookies for 20-30 minutes or until crisp and edges are just slightly darker. Cool completely on sheets on racks, about 30 minutes.
GANACHE: Melt chocolate with cream in a metal bowl set over a pan of barely simmering water or in top of a double boiler, stirring until smooth. (Bowl should not touch water.) Remove bowl from heat, then add coconut oil or butter and raspberry extract, stirring until butter is melted. Let stand at room temperature until cooled completely and slightly thickened.
Carefully peel cookies from parchment (they will be fragile). Sandwich a thin layer of ganache (about 1/2 teaspoon) between flat sides of cookies. Makes 24 sandwich cookie
My version of nowhere near as yummy as I skipped Ganache but still, it tasted good!
