- 1 1/4 pound(s) skinless, boneless chicken breast
- 3 cloves of garlic ( minced)
- 3/4 teaspoon(s) chilli powder
- 1 tsp smoked paprika
- 1/2 teaspoon(s) salt
- 1/4 teaspoon(s) freshly ground black pepper
- 1/4 cup(s) diced red onion
- 2 tablespoon(s) chopped fresh cilantro (coriander)
- 3tablespoon(s) fresh lime juice
- 8large lettuce leaves
- Shredded romaine lettuce/ white cabbage, tomatoes, avocados, for garnish
Directions
- In a medium bowl, toss chicken with garlic, lime juice, 1/2 teaspoon of the chili powder, paprika, salt, and pepper.
- In a medium bowl, mix tomatoes, onion, avocado, peppers,cilantro, and some lime juice, tossing to combine.
- Prepare an outdoor grill or heat a stovetop grill pan over medium heat ( or grill indoors). Cook chicken 3 to 4 minutes per side until cooked through. Remove from grill.
- Cut chicken into 1/2-inch pieces. Fill each lettuce leave with chicken, dividing evenly. Top each with salad mixture. Garnish with lettuce.
