Apricot and lime cheesecake





 1,5 kg curd cheese ( Twarog lowicki or quark cheese)

1 tsp stevia/ or 3 tbsp xylitol 
6 eggs
 2 tbsp butter
 1 tbsp psyllium husks
1 tbsp coconut flour
2 limes ( juice and grated peel)
approx 10 apricots ( or 7 peaches)


 set the oven to 160C
 prepare a large, rectangular baking dish -layer it with baking paper
 All the ingredients must be at room temperature ( take out of refrigerator approx 1 h earlier)
Place butter and stevia/xylitol in mixing bowl
 mix well until fluffy and well combined
 add cheese ( gradually) and mix until smooth
add 1 egg at a time ( approx 1 every 30 sec.) and mix well to combine.
 Add all the other ingredients (  except for the apricots/peaches)

Combine well and transfer to the baking dish
Slice the apricots into fine wedges and place on the top of cheesecake
Place in the oven and bake for approx. 20 min in 160C
 Lower temperature to 140C and bake for approx 40-50 min until golden brown.
 Turn of the oven leaving  the cake inside 
 Remove from the oven when cool and transfer to the fridge

 If required, top up with homemade apricot jelly.
