Traditional Elderflower cordial

 It`s our regular must_be_done as it taste sooo good when opened  for
Christmas dinner and added to some quality fizzy water

 The recipe comes from `Food for Free` Collins gem edition but we modified it `a little` to achieve a healthier version.
 to make 750ml batch
you will need
 1 lemon- grate the rind and slice the fruit
1 kg of sugar ( I substitute it with 3tbs xylitol as we don`t like it sticky sweet and it`s a much healthier version. Last year we made it with raw stevia ( approx. 1 tbsp) and it was even better. Raw honey would be fine, too but it will have to be added at the end, when the cordial is cooled down)
25g citric acid ( I never add this one)
750ml water

Put the sugar/other sweetener of your choice in a large bowl and pour on the boiling water. Stir to dissolve.
Add the grated lemon rind, lemon slices and citric acid ( if you choose to do so), finally the flower heads. Leave for 24h, stirring occasionally. Sieve through muslin, pour into clean bottles and seal with screw top caps ( large jars will also do the trick- I reheat sieved liquid bringing it to boil and pour hot to sterilized jars or bottles ).  Keeps for six months ( actually for much longer in my experience) or you can freeze it as ice cubes or in plastic bottles (leaving room for expansion) .
Poly-Lina Pour and Store Pouches  would work fine too.
