Mussles with roast tomato and herbs


  Quick and easy and yet made from scratch meals are my very favourite, hence lots of pasta with various sauces, salads and soups. This one is another 30 min. top pf the pops and very tasty too.

 Mussles
vine tomatoes
2-3 cloves of garlic- sliced
thyme
lemon wedges
sea salt
ground pepper
red pepper
olive oil
parmesan shavings


 All roasted together in approx 150C. Can be served with pasta, bread,  variety of salads or as it is.  You can also add other veg to the collection and roast together.
Aubergines, caurgettes,  mushroom etc
 If you like it spicy, a splash of peri-peri, harissa sauce or tabasco will do the trick
