Baking Day




 Mainly our weekly bread baking but also managed to produce some sweet cheese rolls for tomorrow`s breakfast, as well as ... a cheesecake, 2 brownies and some wholemeal bread rolls with poppy seed
A supply for a week or so :)

  Cheesy bread rolls
Lightly sweetened  bread rolls with soft cheese and toasted  almond flake topping

 I never follow any recipe with these ones.
 Simply add 2-3 largish egg yolks  well beaten with 2 tbsp fruit sugar( more if using cane sugar)  to a regular white  bread dough.
 A knob of melted butter and a couple tbsp of sourscream/buttermilk/natural yogurt or whatever I happen to have in the fridge. Some real vanilla essence to taste ( almond oil would work fine too). Add as much bread flour as needed to achieve the right consistency and kneed as usual ( I use an ancient Kenwood  Chef food processor with  dough hook ). Cover with cloth /cling film and leave to rise in warm place for approx. 30 min-1h.
 After the dough doubles its size, you can dust it with a little flour, roll it till approx. 2 cm thick and  cut into whatever shape you prefer ( squares, triangles, rectangles etc) or simply brake a small piece and form a ball.
 Brush  well with lightly beaten egg and top up with a spoonful of cheese mixture ( I used part of cheesecake mixture which made it easy :) -recipe to follow) , sprinkle with a few toasted almond flakes and  leave to raise for approx 10-20 min while heating the oven to 160C.
 Place in the oven and bake until golden brown.

In the same way you can make blueberry buns with blueberry filling rather then topping
( blueberries mixed with a spoonful of sugar and a teaspoon of cornflour )
