Cherry treats

Cherry & apricot pudding and sponge

heat the oven to 180C and line the baking dish with baking paper ( or grease a little all the ramekins sprinkling some ground almond around 
8 eggs  separated
150g ground almonds
2 tbsp natural sweetener
8 apricots washed and halved
20-30 cherries complete with stalks
8 ramekins or a large, round baking dish lined with baking paper

beat well egg yolks with 2 tbs fruit sugar until fluffy and light yellow
separately whip all the egg whites until stiff, adding the remaining  sugar at the end
add the ground almonds to egg yolk mixture and mix slowly with a wooden spoon
gradually add the egg white mixture ( one spoon at the time) mixing gently to combine.
Place the apricot halves at the bottom of your baking dish ( or 2 halves per ramekin)
 Pour the cake mixture  ( or share evenly between the 8 ramekins) and decorate with the cherries . 
Place in the oven and bake for approx 20-30 min or until done ( if using ramekins, limit your baking time to approx 15 min)
