 Quinoa is pronounced (Keen-wah) and is a grain unlike other grains, it is a great anti aging food and offers many health benefits.Quinoa nutrition contains twice the protein of regular cereal grains, less carbohydrates, more healthy fats, fiber, phosphorus, calcium and high in iron.
It is the most nutritious of all the grains and up until now has been quite unknown.

Quinoa, courgette & feta salad recipe - Recipes - BBC Good Food

tried and tested and highly recommended, especially as a very healthy Summer lunch option and/or for M. Montignac method followers ( faze 1)






Ingredients

  • 75g quinoa
  • 1 large courgette
  • 1 tbsp red wine vinegar
  • olive oil
  • spring onions , finely sliced
  • 100g cherry tomatoes , halved
  • 1 red chilli , finely chopped
  • 100g feta cheese , crumbled
  • small bunch parsley , chopped
    1. Cook the quinoa following the pack instructions then drain and rinse under cold water. Drain again. Cut the ends off the courgette then cut into ribbons using a potato peeler. Whisk together the vinegar and 2 tbsp oil and season.
    2. Put the rest of the ingredients in a large bowl, then pour over the dressing and toss everything together

Cherry treats

Cherry & apricot pudding and sponge

heat the oven to 180C and line the baking dish with baking paper ( or grease a little all the ramekins sprinkling some ground almond around 
8 eggs  separated
150g ground almonds
2 tbsp natural sweetener
8 apricots washed and halved
20-30 cherries complete with stalks
8 ramekins or a large, round baking dish lined with baking paper

beat well egg yolks with 2 tbs fruit sugar until fluffy and light yellow
separately whip all the egg whites until stiff, adding the remaining  sugar at the end
add the ground almonds to egg yolk mixture and mix slowly with a wooden spoon
gradually add the egg white mixture ( one spoon at the time) mixing gently to combine.
Place the apricot halves at the bottom of your baking dish ( or 2 halves per ramekin)
 Pour the cake mixture  ( or share evenly between the 8 ramekins) and decorate with the cherries . 
Place in the oven and bake for approx 20-30 min or until done ( if using ramekins, limit your baking time to approx 15 min)

Parsley Pesto &Pepperoni Pizza

Preparation method

  1. Put all the ingredients except the oil and salt into the food processor. Whiz for a second or two, add the oil and a little salt. Taste and correct seasoning.


    And this time it replaced a regular tomato sauce topping on a regular, homemade pizza ( along with pepperoni, peppers, onions and cheese)

Baked almond-stuffed peaches

Serves 8
10 large ripe but firm peaches
10 organic non- bleached dried apricots, finely diced
2 tbsp ground almonds
2 tsp almond extract
2 egg whites
100 g almond flakes ( toasted)
1 tbsp agave syrup (can be substituted with honey or maple syrup)

1.Preheat the oven to 180C (350F, Gas mark 4)
2.Cut the peaches in half and remove the stones. Arrange 16 of the halves cut side up in a shallow baking dish. Set aside. Finely dice the remaining reaches.

3.Combine diced peached with dried apricots, ground almonds , almond extract, agave syrup and egg white.
4.Use the mixture to fill the hollows in the peach halves, heaping up the filling and pressing it gently together. Sprinkle on the top some almond flakes. Cover with a tent of cooking foil

5.Bake for 25-30 min. then remove the foil. Increase the oven temp. to 200C and bake for further 5-10 min or until the nutty topping is lightly browned. The peaches are best  when warm but they can be chilled before serving.

Suggestions:
 Nectarines can be used instead of peaches with pistachios instead of almonds
use apricots or quinces instead of peaches, allowing 15 min extra baking time

use mixture of peaches or nectarines, apples, pears and quinces. Make the filling from a mixture of these fruit. Allow 10-15 min extra baking time.

 For baking stuffed apples or pears you can substitute sultanas for the dices dried apricots and add a few shakes of ground cinnamon to the filling. Substitute walnuts for the almonds.

 Can be also served with homemade vanilla ice cream or sour cream, creme fresh



Hot apricot Suffles

Serves 8
5 tsp ground almonds
8 fresh apricots washed and stoned- blended in food processor
6 large or 8 small eggs ( separated )
4 tbsp double cream
1 tbsp fruit sugar
1 tsp Madagascar vanilla extract or 1 vanilla pod
1 tsp lemon juice
1 tsp cream of tartar

To finish
  some extra ground almond with a little cocoa powder and/or 1 tsp fruit sugar


1.Preheat the oven to 200C (400F), gas mark 6) and place a baking tray inside to heat. Lightly butter 8 175 ml ramekins and dust the sides with ground almonds shaking out the excess.

2. Put the egg yolks, sugar, vanilla extract and lemon juice in  food processor`s mixing bowl and beat well until light yellow, smooth and doubled in size. Add blended apricots, cream and mix well until smooth.
3 place the egg whites in a clean bowl and whisk until soft peaks  form. Sift over the cream of tartar and continue whisking  until stiff peaks form. Spoon the apricot mixture  over the egg whites and use a large, metal spoon to fold together, taking care not to overmix and deflate the egg whites.
4. Divide the apricot mixture among the prepared ramekins. Use a round-bladed knife to mark a circle in the centre of each souffle- this helps the tops to rise evenly.
 5.Place the ramekins on the heated baking tray and bake in the centre of the oven fr 15 min or until the souffles are well risen and golden brown on top. Immediately dust with fruit sugar/almond, sugar cocoa mixture and serve at once.

Well, ours are far from perfection.... but next time should be better :)



Apricots again!!!

 Yet not preserved this time. The recipes call for canned fruit, but as it`s in season, I opted for some fresh, ripe apricots from our local farm shop.

  Very easy to follow recipes from  Fresh Fruit & Desserts book for quick and yummy puddings that  could be easily adapted for Montignac diet

Chimichurri

 one good use for lots of parsley

Chimichurri Recipe

INGREDIENTS

  • 1 cup firmly packed fresh flat-leaf parsley, trimmed of thick stems
  • 3-4 garlic cloves
  • 2 Tbsps fresh oregano leaves (can sub 2 teaspoons dried oregano)
  • 1/2 cup olive oil
  • 2 Tbsp red or white wine vinegar
  • 1 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes

METHOD

1 Finely chop the parsley, fresh oregano, and garlic (or process in a food processor several pulses). Place in a small bowl.
2 Stir in the olive oil, vinegar, salt, pepper, and red pepper flakes. Adjust seasonings.
Serve immediately or refrigerate. If chilled, return to room temperature before serving. Can keep for a day or two.
Serves 4.

Gardening: blood, sweat and HLM  we conditioned the straw bales and planted some tomatoes, courgettes, a pumpkin and lamb lettuce. So far, so good ( except for our duck`s fancy to nest on the top, between a pumpkin and a tomato plant)

Some red tomatoes coming now and courgettes getting ready. Lots of seedlings waiting to be planted once it stops raining so heavily. Runner beans, french beans, broccoli, kale, peas ( great bootfair bargain at 25p/12 plants ) and some perennials ( also a bargain at 20-50p/plant or £1/10 established seedlings) , some lovely dhalias and Livingstone daisies .
Ordered 2 polytunnel cloches to protect some fresh seedlings from our drake ( as he seems to take fancy of these) and some more seeds ( rainbow carrots, ghurkins (piccolo di parigi), peas (main crop ), Endivia Romanesca and China Rose Winter raddish )

Father`s Day strawberry coconut sorbet

 1kg (or so) strawberries
 a splash of coconut milk ( up to 400ml can but  less is OK)
2-3 tbsp fruit sugar ( or lots more if using icing sugar)
lemon juice from 1 lemon
 some fresh strawberries to decorate
ice cream maker ( 1.5l bowl capacity)


 Crashed strawberries with added coconut milk, sugar and lemon juice- mix well and place gradually in operating ice cream maker. Leave to churn ( approx 30 min). Decorate with remaining strawberries. Enjoy!
