Chicken breast with cranberry




3 chicken breasts (filleted and halved)


3 slices of smoked Gouda cheese (Kerrygold  Gouda Cheese is what I used this evening)
3 slices bacon (cooked and crumbled)
1.5 C cranberries
2TB raw honey
1/4 c red wine (if no wine, use water, broth will alter the flavor)



in a small sauce pan I placed  cranberries, wine and honey in a pot and brought to a boil and then simmered til it thickens(stirring constantly)-- (set aside)





Cook the chicken breasts in your skillet (I seasoned mine with pepper and redmonds garlic salt and a little onion powder)  When your chicken is finished cooking transfer to a pan or Pyrex dish and  top with your gouda and crumbled bacon and place in the oven on high broil til cheese melts some 




Serve it with reduction sauce on the side and I served it tonight with sauteed Brussels
