Chocolate-Hazelnut and Coconut Crepe Cake

Chocolate-Hazelnut and Coconut Crepe Cake

"This crepe cake is sheer madness...insanely awesome madness, to be exact. One bite and you'll die and go to delicious heaven."

For the crepes:
6 eggs
1 cup of full-fat coconut milk
1 tablespoon of vanilla extract
2 tablespoons of raw coconut nectar, honey, or maple syrup, to taste
1/4 cup of coconut flour
1/4 cup of good quality cocoa powder

For the chocolate hazelnut filling:
10 ounces of dairy-free chocolate chips (e.g. Enjoy Life)
8 ounces of hazelnuts
1 cup of full-fat coconut milk
1 tablespoon of vanilla extract
1-2 tablespoons of coconut nectar, raw honey, or maple syrup (optional)

For the coconut cream:
1 can of full-fat coconut milk, left in the fridge overnight

For the garnishes:
1/4 cup of good quality cocoa powder
1/3 coconut flakes, toasted until golden brown
