4 medium-sized red potatoes, peeled and grated
2 carrots, peeled, stemmed and grated
1 red onion, peeled, stemmed and finely minced
2 eggs (preferably organic and free-range/pastured)
1 tablespoon herbs de Provence* (fresh or dried)
fine ground Himalayan or other natural salt to taste
coconut oil, grass-fed ghee, duck fat or lard for frying
