Upside down muffins

 apples cored and sliced( rings)
4 eggs
1-1 1/2 cup almond flour
2 TBSP coconut flour
1/3 cup natural sweetener( like unrefined coconut blossom sugar)
1/4 cup goats milk( or non-dairy milk)
2 tbsp soft coconut oil
1 pinch salt
 1/2 tsp soda
cinnamon ( real cinnamon )
natural apple extract (optional)
